Weeknight Pesto Zoodles (without a spiralizer!)

RECIPE STATS

Prep Time = 15 minutes
Cook Time = 5 minutes
Serving Size = 2-3 servings

    INGREDIENTS

    3-4 Zucchini Squash
    Olive oil
    Pesto
    Parmesan Cheese
    Cherry Tomatoes
    Salt and pepper to taste  

    TOOLS

    GIR Y-Handle Julienne Peeler (for the zoodles!)
    Frying Pan
    GIR Ultimate Spatula
    Mixing Bowl
    GIR I-Handle Flat Peeler (for the parmesan!) 

    DIRECTIONS

    1. Use the GIR Y-Handle Julienne Peeler to shred the zucchini into long noodles. Then, halve the cherry tomatoes.
    2. Heat up some olive oil in a pan over medium heat. Then, toss in your zoodles.
    3. Saute the zoodles for 1-2 minutes, then mix in the diced tomatoes and pesto sauce of choice.
    4. Top with parmesan and serve!

    HACK

    Don’t have a cheese grater? No problem. Just use your GIR I-Handle Flat Peeler instead and control the size and width of your cheese - works like a charm!
