Ingredients:

  • 1 pound lean ground beef (or ground turkey)
  • 1 yellow onion (or sweet onion), chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) Rotel tomatoes
  • 1 can (8 oz) tomato sauce
  • 3 cups beef broth (or chicken broth, if using ground turkey)
  • 1 cup water
  • Seasoning mix (or store-bought seasoning packet)
  • Salt and pepper to taste
  • Optional garnishes: chopped cilantro, sliced green onions, jalapenos, shredded cheddar cheese, sour cream
