How To Cook A Turkey: The Roasting Method

Thaw Completely Before Cooking
A frozen turkey requires full thawing before it goes into the oven. The safest method is refrigerator thawing, which takes approximately 24 hours for every 2.27 kg (5 pounds) of turkey. A 5.4 kg (12-pound) bird needs at least two full days in the refrigerator. Cooking a partially frozen turkey produces dangerously uneven internal temperatures, with the exterior overcooking before the center reaches a safe level.
Set the Oven Temperature
A conventional oven set to 163°C (325°F) is the USDA-recommended temperature for roasting a whole turkey. This temperature allows heat to penetrate the bird at a steady, even rate without drying out the exterior before the interior is done.
Research published in the Journal of Food Science and indexed on PubMed compared turkey cooked at 105°C, 135°C, and 165°C and found that lower roasting temperatures produced significantly higher juicy mouthfeel scores. Turkey cooked at 105°C required more time but consumed less energy and retained more moisture than turkey cooked at higher temperatures. For home cooks, this means that patience at a moderate oven temperature produces a better-textured result than rushing with high heat.
Plan Cooking Time by Weight
Use the weight of the turkey as your starting point for timing, but treat it as a rough guide rather than a definitive endpoint. These are approximate roasting times at 325°F (163°C) for an unstuffed turkey:

A stuffed turkey always takes longer and requires the stuffing to reach 165°F (74°C) as well. Cooking stuffing separately in a dish eliminates this complication and allows both the bird and the stuffing to cook evenly.
Place the Turkey Correctly in the Pan
Place the turkey breast side up on a flat or V-shaped rack in a shallow roasting pan. The rack lifts the bird off the pan floor, allowing hot air to circulate underneath and preventing the bottom from steaming rather than roasting. A shallow pan allows more heat to reach the sides of the turkey than a deep-sided roasting pan.
A silicone basting spoon handles the hot pan drippings safely for basting the bird during cooking. Basting every 30 to 45 minutes adds moisture to the skin and supports even browning across the surface.
Check Temperature in the Right Places
Start checking the internal temperature about 45 minutes before the lower end of the estimated cooking time. Insert the thermometer into the thickest part of the thigh without touching the bone, which conducts heat faster than the meat and will give a falsely high reading. Once the thigh registers 165°F (74°C), check the breast and the innermost part of the wing. All three locations must reach the safe minimum temperature before the turkey is ready to come out.
Resting the Turkey Before Carving
Once the turkey comes out of the oven, it needs to rest for 20 to 30 minutes before carving. This is not just a convention. During rest, the internal temperature continues to rise slightly from carry-over heat, and the muscle fibers relax and reabsorb the juices that moved toward the center during cooking. Cutting into the turkey too early causes those juices to run out onto the cutting board rather than staying in the meat.
Tent the turkey loosely with aluminum foil during the rest period to retain heat without steaming the skin soft.
Common Turkey Cooking Mistakes Worth Knowing
These are the habits that most consistently lead to dry, unevenly cooked, or unsafe results.
