Makes 16 standard cupcakes or 12 standard and 12 mini cupcakes.

Ingredients:

  • 1 ¾ cups all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ¾ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 ½ sticks (12 Tablespoons) unsalted butter, softened
  • ¾ cup lightly packed brown sugar
  • 2 large eggs
  • 2 ounces unsweetened chocolate, melted
  • 1 cup buttermilk
  • 1 tsp vanilla extract

Directions:

  1. Preheat the oven to 350°F. Line the muffin cups with paper liners.
  1. Whisk together the flour, cocoa powder, baking soda, baking powder, and salt in a medium bowl. With an electric mixer on high, beat the butter and sugar until light and fluffy, about three minutes in another medium bowl.
  1. Add the eggs, one at a time, beating well after each addition. Beat in the melted chocolate. Reduce the speed to low and add the flour mixture alternately with the buttermilk in batches, beginning and ending with the flour mixture and beating just until blended. Stir in the vanilla.
  1. Spoon half of the batter into a sealable gallon bag. Snip a ¼-inch corner from the bag and fill the paper liners two-thirds full. Repeat with the remaining batter. Bake until golden and a toothpick inserted in the center comes out clean, 15 to 20 minutes. Remove the cupcakes from the baking pan, place on a wire rack, and allow to cool completely.

Chocolate Frosting Recipe

Makes 2 ½ cups

Ingredients:

  • 1 stick (8 Tablespoons) unsalted butter, cut into 8 pieces
  • 2 ounces semisweet chocolate, chopped
  • ½ cup unsweetened cocoa powder
  • 1 box (16 ounces) confectioners’ sugar
  • 1/3 – ½ cup milk

Directions:

  1. Combine the butter and the chocolate in a small saucepan. Melt over medium heat, stirring constantly. Add the cocoa powder and stir until smooth. Transfer the chocolate mixture to a large mixing bowl and beat with an electric mixer.
  1. Add the confectioners’ sugar alternately with the milk, adding more milk to thin, and beat until fluffy and smooth.

What Are Some Additional Tips?

Buttermilk isn’t a common staple in many households, and if you’d rather not buy it just for this recipe (especially if your family doesn’t drink buttermilk), you can opt for powdered buttermilk. It can generally be found in the baking aisle of most grocery stores and lasts a long time when stored in the fridge after opening. 

You simply follow the easy conversion directions on the back of the package, mixing the dry buttermilk blend with your other dry ingredients. Then, add the appropriate amount of water to the spot in the recipe where it calls for the liquid buttermilk.

While the recipe above indicates using paper liners, silicone liners work well, too, with good results. Plus, silicone liners are reusable and environmentally friendly. They also generally do not require cooking sprays since silicone bakeware is naturally nonstick.
